Soups--Hot-and-Sour Thin Soup of Turtle Meat

Ingredients: 750g soft-shelled turtle, 1 box of bean curd, Shaoxing wine, refined salt, gourmet powder, vinegar, white pepper, water chestnut powder, shredded coriander, ginger, chives


  1. Kill and clean the turtle. Scald in boiling water. Put it in a casserole. Add chives, ginger, Shaoxing wine and water. Braise till the turtle is nearly done. Take out the turtle (keep the gravy). Remove the bones from the turtle and knife the meat into oblique shreds about 0.8cm long. Knife the bean curd in the same way.
  2. Put the gravy (see 1) in the wok and put in the turtle meat and bean curd shreds. When they are done, put in Shaoxing wine, refined salt and gourmet powder. Make a paste with water chestnut powder. Put them in a glass tureen. Pour in some vinegar and sprinkle some pepper and shredded coriander.
