Fish & Seafood Dishes--Simmered Abalone with Koji

Ingredients: a living South African abalone (about 750g), chicken, lean meat, ham, wing's bones, chicken net, koji, gourmet powder, ginger, chives, dried scallions, sea horse, flatfish, chicken essence


  1. Shell the living abalone and wash with water chestnut powder. Scald in boiling water for 20 minutes and stew for 20 minutes over a fire of 40-50o.
  2. Fry chicken, lean meat, ham and wing's bones in oil of 80otill golden. Bring a boil to 4,000g water and put the abalone and seasonings in. Stew for 7-10 hours over a weak fire.
  3. Put the stewed abalone, gravy and koji in a casserole and simmer for 5 minutes. Take out and put in a serving dish. Make a paste with the gravy and pour on the abalone.
