Fish & Seafood Dishes--Steamed Shark's Fins with Broccoli in The Shape of The Sun

Ingredients: 300g shrimp colloid, 150g dietyophora cinnabarine, 25g shark's fins, 10 roes, 150g broccoli, oil, refined salt, gourmet powder, Shaoxing wine, water chestnut powder, egg white, high stock


  1. Slice dietyophora cinnabarine into pieces 5 cm long and put them in water. Stew with salt and gourmet powder. Drain off water. Coat them with water chestnut powder. On them spread shrimp colloid. Cover with shark's fins. Make rolls and steam for 5 minutes.
  2. Scald the broccoli till done and put it in the center of a dish. Circle it with the steamed rolls in the shape of sun's rays. Make a paste with high stock and pour it on the dish. Sprinkle some roes and serve.
