Fish & Seafood Dishes--Fried Perch in Wine and Butter
Ingredients: 1 perch about 600g, scallion shreds, red pepper shreds, coriander, butter, Shaoxing wine, fermented soybean oil
Cut off the head from the perch and set it aside. Have a cut below the place where the head was. Make a cut on the back to remove the keel. Have a vertical cut and six horizontal cuts on the both sides of the perch.
Hold the tail and put the perch slowly into the hot oil. Put the head in at the same time. When they are golden, put them on a serving dish with the head open.
Mix some Shaoxing wine with fermented soybean oil and pour it on the dish. Pour two spoons of hot cooked butter on the perch. Dust some scallion shreds, onion shreds, corianders and serve.
