Fish & Seafood Dishes--Fried Bean Curd Sheet-Coated Mandarin Fish

Ingredients: 1 mandarin fish, bean curd sheet, pork slices, coriander stalks, bamboo shoot shreds, refined salt, gourmet powder, prickly ash, chives, ginger, Shaoxing wine, egg, water chestnut powder.


  1. Remove the bones from the mandarin fish. Pickle in the mixture of Shaoxing wine, salt, gourmet powder, prickly ash, chives and ginger for 2-3 hours.
  2. Saut¨¦ pork slices, coriander stalks and bamboo shoot shreds till done. Put them in the pickled mandarin fish's abdomen. Steam in a food steamer till done. Remove.
  3. Beat the egg and make a paste with water chestnut powder. Surface the bean curd sheet with the paste. Wrap the mandarin fish with the bean curd sheet. Fry in oil till golden. Remove and serve.
