Fish & Seafood Dishes--Crisp-Baked Eel (Man)

Ingredients: 1 living eel (man) (about 600g), sweet wheat sauce, seafood sauce, maltose, sugar, fermented soybeans, dark soy, light soy, scallion, ginger shreds, gourmet powder, sorghum wine, oil, high stock


  1. Kill the living eel from the head to tail, remove the vertebra, chop the head open but still connected to the body.
  2. Put all the seasonings together (except oil and maltose) and stir to mix them well. Put the eel in and pickle for about half an hour.
  3. Bake it for 15 minutes or so, take out and coat it with maltose syrup. Bake for another 5 minutes, remove, surface it with oil and serve.
