Fish & Seafood Dishes--Pickled, Fried and Steamed Eels (Shan)

Ingredients: 1,500g living eels (shan), soy, oil, bittern, sugar, gourmet powder, Shaoxing wine, chives, ginger


  1. Put living eels in boiling water in a covered wok. When the mouths open, take out and put them in water. Remove the bones and clean. Put them in a bowl. Add soy, sugar, chives, ginger, bittern and gourmet powder. Stir to mix them up. Pickle for about half an hour.
  2. Take out the pickled eels and fry in hot oil till golden. Remove with a perforated ladle.
  3. Leave little oil in the wok. Put in fried eels. Add Shaoxing wine, soy, sugar, gourmet powder and the bittern and water. Simmer for half an hour. Put the eels and the gravy in a container and steam for 3-5 minutes. Take out, remove the gravy and serve.
