Fish & Seafood Dishes--Quick-Fried Shrimps with Preserved Dried Vegetables

Ingredients: 250g living river shrimps, 150g Shaoxing preserved dried vegetables, chive shreds, ginger juice, Shaoxing wine, red soy, refined salt, white sugar, peanut oil


  1. Clean the living river shrimps and drain off water. Add lard in preserved dried vegetables and steam for 3 hours.
  2. Put peanut oil in a heated wok and heat it till done. Put the shrimps and preserved dried vegetables in the peanut oil with a perforated ladle. Stir with the ladle and fry for 20 seconds. Remove and drain off oil.
  3. Leave a little oil in the wok. Quick-fry the chive shreds fragrant. Add Shaoxing wine, ginger juice, sugar, soy and refined salt. Bring to a boil with a strong fire. Push and stir quickly with the ladle. When it thickens, put in shrimps and preserved dried vegetables. Take the wok away from the fire and stir to make the shrimps be coated by the gravy. Finally, pour on some heated peanut oil. Put them on a plate and serve.
