Ingredients: 750g fresh shark's fins, light soy, oyster sauce, gourmet powder, sugar, chicken essence, ginger juice, dried scallop juice, abalone juice, ham juice, oil, dark soy, rice wine, watered water chestnut powder
- Clean the shark's fins and put them in a serving dish. Add juice of chive and ginger and rice wine. Let marinate for about 1 hour.
- Scald shark's fins in hot water to remove the unpleasant smell. Take out and put them in the dish. Season them and add some high stock. Steam till done. Take out.
- Saut¨¦ chives and gingers till fragrant. Add the seasonings above. When it is cooked, make a paste with watered water chestnut powder. Braise over a weak fire till the paste is shining. Pour it on the shark's fins and serve.
