Fish & Seafood Dishes--Saut¨¦ed Crabs with Noodles

Ingredients: 2 crabs (with ovum, about 1,000g), 250 noodles made of sweet potato flour, salt, sugar, gourmet powder, chicken essence, pepper, soy, wine, oyster sauce, chives, ginger, garlic shred, dried peppers


  1. Soften the noodles of sweet potato flour in water. Cut crabs into chunks and coat with water chestnut powder.
  2. Stir-fry the ginger, garlic and dried peppers in oil till fragrant. Add crab chunks. Fry briefly. Add stock. Put in noodles, soy, wine, oyster sauce and sugar. Braise till done with the wok covered. Simmer over an intermediate fire to be flavored. Finally pour on done oil. Remove and serve.
