Cold Dishes--Saut¨¦ed and Frozen Goose Liver Slices

Ingredients: 500g goose livers, butter, chives, ginger, light soy, gourmet powder, prickly ash, sugar, Shaoxing wine


  1. Clean and scald the goose livers.
  2. Saut¨¦ the chives and ginger in heated oil. Add gourmet powder, prickly ash, sugar, Shaoxing wine and light soy. Put in the goose livers and stir-fry them till done. Remove and cool down.
  3. Make the goose livers into a mousse and put it in a model coated with butter on both sides. Put the goose liver mousse in the refrigerator for 3-4 hours or till frozen. Slice and place in a dish.
